Ghee The Golden Nectar


Ghee is the clarified butter that has been used in Ayurveda for thousands of years. It can be considered what we called today a superfood due to the many benefits it can bring to our overall wellbeing. Some of these benefits include:
“¢ Support of a healthy digestive tract: Healing the gut is an important first step in combating any digestive problems. Ghee is rich in butyric acid, a short-chain fatty acid that nourishes and repairs intestinal cells. “¢ It decreases inflammation and reduces risk of cancer: Butyric acid supports the production of killer T cells, which kill cancer cells. Ayurveda have used ghee for centuries to reduce inflammation and nourish the tissues. “¢ It can help reduce risk of heart disease: Ghee is rich on conjugated linoleic acid (CLA), a fatty acid known to protect against carcinogens, artery plaque, and diabetes. This is the reason why researchers recommend including ghee in your diet to help prevent cardiovascular diseases. “¢ It can help you lose weight: In addition to the cardiovascular benefits provided by the CLA in ghee, it has also been shown to help prevent weight gain and aid in weight loss. One study showed that participants who took CLA supplements over a six-month period lost significant amounts of weight. “¢ It helps cleanse negative emotional toxins and promotes positivity: Ghee is considered one of the most Sattvic foods, which are essential, energy-giving, and pure in nature. In the yogic tradition, sattvic foods promote positivity, growth, and expansion of consciousness.
Ghee preparation is very simple and you can do it at home: In a stainless-steel pot, melt and bring to boil 1 pound of organic unsalted butter. Reduce to low heat and simmer. It will start producing foam; stir slowly until the foam is absorbed back in the butter and a crackling sound is produced. Let the butter simmer for about 25 minutes, stirring occasionally until you see a thick coat of golden butterfat residuals at the bottom. Remove from the stove and let it cool down. Strain the ghee into a glass container. Ghee does not need refrigeration and it can last up to two months. Ghee has an excellent aroma and is flavorful. You can use ghee to sauté foods, in baking, or as a spread. Enjoy!

Ghee es la mantequilla clarificada que se ha utilizado en Ayurveda durante miles de años. Lo podemos considerar dentro de lo que llamamos hoy un súper alimento debido a los muchos beneficios que puede aportar a nuestro bienestar general. Algunos de estos beneficios incluyen: “¢ Un tracto digestivo saludable: curar el intestino es un primer paso importante en la lucha contra los problemas digestivos. Ghee es rico en ácido butírico, un ácido graso de cadena corta que nutre y repara las células intestinales. Disminuye la inflamación y reduce el riesgo de cáncer: ácido butírico apoya la producción de células T que matan las células cancerosas. Ayurveda ha utilizado ghee hace siglos para reducir la inflamación y nutrir los tejidos. “¢ Puede ayudar a reducir el riesgo de enfermedades cardíacas: Ghee es rico en ácido linoleico conjugado (ALC), un ácido graso conocido por proteger contra agentes carcinógenos, la placa arterial y la diabetes. “¢ Ayuda a perder peso: además de los beneficios cardiovasculares proporcionados por el ALC, también se ha demostrado que el ALC ayuda a prevenir el aumento de peso e inclusive, promover la pérdida de peso. “¢ Ayuda a limpiar las toxinas emocionales negativas y promueve la positividad: Ghee es considerado uno de los alimentos más puros y energéticos conocidos como sátvicos. En la tradición del Yoga, los alimentos sátvicos promueven positividad, crecimiento y expansión de la conciencia.
La preparación de ghee es muy sencilla y la puedes hacer en casa: en una olla de acero inoxidable, derrite 1 libra de mantequilla sin sal orgánica hasta que empiece a hervir. Reduce a fuego lento. Comenzará a producir espuma; revuelve lentamente hasta que la espuma se absorba en la mantequilla y se produzca un ligero sonido. Deja la mantequilla a fuego lento durante unos 25 minutos, revolviendo ocasionalmente hasta que se forme una capa gruesa con los residuos de grasa en la parte inferior. Retira de la estufa y deja enfriar. Cuela el ghee en un recipiente de vidrio. No necesita refrigeración y puede durar hasta dos meses. El ghee tiene un excelente aroma y es delicioso. Se puede utilizar para saltear alimentos, hornear, o simplemente sobre pan tostado. ¡Disfruta de este delicioso néctar!
