Desmitificando el Gluten

En los últimos años, la guerra contra el gluten se ha vuelto viral y cada vez son más las personas que modifican su dieta evitando el gluten a toda costa. Si bien sabemos que el gluten es una proteína compleja muy difícil de digerir y no esencial para nuestra salud, la respuesta drástica de eliminar el gluten de la dieta posiblemente está tratando el síntoma y no resuelve la verdadera causa del problema.
No hace mucho tiempo, el trigo, la principal fuente de gluten, se cosechaba sólo una vez al año durante el otoño. En nuestra era moderna, el trigo ha pasado por procesos de hibridación y se cosecha 3 veces al año. El trigo se ha tornado tan popular que hoy lo consumimos en cada comida, diariamente a lo largo de nuestra vida. ¿Podría ser que hemos abusado de su consumo?
Un estilo de vida ayurvédico promueve el equilibrio en todo lo que hacemos y comemos. Demasiado de una buena cosa puede ser perjudicial para nuestro cuerpo. El trigo en exceso resultará en la acumulación de grasa, más altos niveles de glucosa y mayor toxicidad. Nuestros antepasados solían fermentar sus vegetales para su preservación durante el invierno. Poco sabían que estas verduras fermentadas liberan bacterias lactobacillus que descomponen las partes más difíciles de digerir de la molécula de proteína del gluten. Estudios recientes indican que los probióticos no sólo nos ayudan a digerir proteínas complejas como el gluten sino también protegen la pared intestinal, evitando que esta molécula compleja penetre la pared intestinal.
Por lo tanto, antes de culpar al gluten de todos nuestros males, comencemos por evaluar nuestra capacidad de digerir y nuestra fortaleza digestiva. Un buen comienzo es remover los alimentos procesados y los azúcares de nuestra dieta. Una dieta sana basada en frutas y verduras orgánicas, granos, proteínas magras, nueces, hierbas y especias es la base fundamental de una buena digestión.

Demystifying Gluten

In the recent years, the war against gluten has gone viral and we have seen an incremental number of people modifying their diets to avoid gluten at any cost. While we know that gluten is a complex protein very hard to digest and non-essential to our health, the drastic response of removing gluten from our diet is possibly treating a symptom and not addressing the root cause of the real problem.
Not that long ago, wheat, the main source of gluten, was harvested only once a year during the fall. In our modern era, wheat has been hybridized and it is harvested 3 times a year. Wheat has become so popular that we have ended up consuming it in every meal, every day throughout our life. Could it be that we have abused its consumption?
An Ayurvedic lifestyle promotes balance in everything we do and eat. Too much of a good thing can be harmful to our body. Overeating wheat will result in fat accumulation, higher glucose levels, and toxicity. Our ancestors used to ferment their vegetables to preserve them through the winter. Little they knew that these fermented veggies release lactobacillus bacteria that break down the hard-todigest portions of the gluten protein molecule. Recent studies indicate that probiotic supplements not only help us digest complex proteins like gluten but also protect the intestinal wall by disallowing the undigested gluten molecule to penetrate the gut wall.
So, before we blame gluten for all that ails us, we might want to begin by assessing our ability to digest and focus on strengthening our digestion. A good start is avoiding processed foods and sugars from our diet. A wholesome diet based on organic fruits and vegetables, grains, lean proteins, nuts, herbs and spices is the foundation of a good digestion.
